The first recorded spelling of the Leighton surname appeared in the early 13th century rendered as “de Lecton”. A couple Leightons in the early 14th century were knighted by the King of England suggesting leek farmers did alright in medieval England. As a given name Leighton is relatively modern and, for the most part, considered gender-neutral. However, the only countries that appear to be using it are the United States and Canada.
